Rocco DiSpirito is a healthy lifestyle crusader, James Beard award-winning chef, and highly acclaimed author of thirteen books, including five New York Times bestsellers. He is recognized for his inspiring weight loss journey and has dedicated his life to proving that healthy and delicious are not mutually exclusive. Rocco was recently in the March issue of Welcome Home contributing two recipes out of his brand new keto cookbook, Rocco’s Keto Comfort Food Diet.
1. Why did you decide to start writing cookbooks?
In the early 2000s when was cooking at Union Pacific I realized I had a unique point of view and a very personal style of cooking. That’s when I decided to write about it.
2. What inspired your current cookbook?
Keto has always been my go to diet for rough patches. Any time I get off track even a little bit, I use the keto method to lose weight quickly.
3. What’s next for you?
I’m already working on my next book, a new restaurant concept and I’m going to attempt a triathlon again soon after a multi-year break.
