This delicious Cranberry Rosemary Chicken bakes in its marinade, making it a simple recipe that is very impressive. Serve it over rice, mashed potatoes, or creamy polenta for a guest-worthy main dish that is free of refined sugars and deceivingly healthy.
Pour all of the marinade ingredients into a blender and blend until smooth.
Arrange chicken thighs skin side up in a 9×13-inch baking dish. Pour the marinade evenly over the chicken. Cover and refrigerate for 30 minutes, or up to 12 hours.
Use a rubber spatula to scrape the marinade off the skin. Brush skins with the olive oil, then sprinkle with the salt and pepper.
